Preparación
- Cook the beet in boiling water with a pinch of salt, until you can insert a fork without much difficulty. Remove the beet from the water, peel and dice. Bake the betabel for 15 minutes if you want a roasted texture.
- Prepare the dressing by mixing dijon mustard and apple cider vinegar in equal parts. You can add a tablespoon of Greek yogurt if you want a creamy consistency. Season with salt and pepper to taste.
- Slice the peach, pear, onion and avocado. Place them on a bed of spinach or lettuce, beet and dressing. Stir and garnish with whole or chopped nuts and croutons/crackers.
