Preparación
- Wash and leave soaking the chickpeas overnight. Drain the soaking water and place the chickpeas in a pot, then cover the chickpeas completely with fresh water. Cook for 1 hour or until chickpeas are soft. If you use an express pot, cooking is much faster. ***You can use canned chickpeas, just rinse them to remove excess sodium.
- Cook the chicken in a pot with boiling water for 15 minutes or until cooked inside. Drain the water and with the help of two forks, crush the chicken.
- Add avocado to chicken stir to incorporate ingredients. Season with a pinch of salt and pepper.
- Chop the tomato and onion into cubes. Add it to the chicken dish along with the cooked chickpeas.
- Roast the bread and make a sandwich with the chicken and chicken salad. Add lettuce leaves (optional).
