Preparación
- Chop the onion into thin slices.
- In a pot, melt the butter over medium heat. Add the onion and cook, stirring occasionally, for 20 minutes or until the onion is very browned.
- Add flour to the pot with the onion and stir until incorporated, season with salt and pepper, then add 1/4 cup white wine and cook for 3 minutes or until liquid evaporates.
- Add enough chicken or beef broth to dilute the flour and make it soup-like. Ideally use homemade broth, but you can use powdered broth diluted in water for practicality. When the first boil is released, reduce the heat, cover and cook for another 15 minutes.
- Place slices of baguette bread with grated cheese on top in the oven to brown and gratine.
- Serve the onion soup on a deep dish with the bread on top so that it begins to soften.
