Preparación
- In a blender, combine ripe bananas, fresh spinach leaves, whole wheat flour, baking powder, egg, milk, vanilla extract and a dash of cinnamon.
- Blend until you have a smooth batter with specks of green from the spinach.
- Heat a non-stick skillet or griddle over medium heat and lightly grease it with olive oil or cooking spray.
- Pour small amounts of the batter onto the skillet to form pancakes.
