Preparación
- In a bowl, whisk together the olive oil, lime juice, minced garlic, smoked paprika, and pepper. Place the sliced chicken breast in a resealable plastic bag or a shallow dish, and pour the marinade over it. Refrigerate for at least 1 hour, or ideally, up to 4 hours.
- While the chicken is marinating, slice the bell peppers and onion into thin strips
- In a large skillet or a cast-iron pan, heat the vegetable oil over medium-high heat. Add the sliced bell peppers and onions to the pan. Cook, stirring occasionally, until the vegetables are slightly softened and have some char, about 5-7 minutes.
- Remove the chicken from the marinade and shake off any excess. Place the chicken slices in the pan in a single layer. Cook for about 2-3 minutes on each side, or until the chicken is cooked to your desired level of doneness.
- Return the cooked bell peppers and onions to the pan with the cooked chicken.
- Heat the tortillas.
- Place a scoop of the chicken and vegetable mixture onto a warm tortilla.
