Ingredientes

Preparación
- Cover the lentils in water completely and cook for about 30 minutes or until soft.
- Meanwhile, cut the zucchini half, then cook in a steamer for 10 minutes. Hollow out the middle with a spoon. Reserve the flesh.
- Finely chop the tomato and onion.
- In a pan with oil, sauté the tomato, onion and zucchini flesh until vegetables are soft. Mix in the cooked lentils.
- Scoop the lentil and vegetable mixture into the hollowed out zucchini. Sprinkle shredded vegan cheese on top.
- Bake on high heat for 8 minutes.
- Serve and enjoy!
