Ingredientes

Preparación
- Marinate the Tofu: Firm tofu, pressed and cubed.
- In a medium bowl, whisk together the soy sauce, olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper.
- Add the cubed tofu and toss to coat evenly.
- Let the tofu marinate for at least 30 minutes, preferably longer, to absorb the flavors.
- In a large skillet, heat a bit of olive oil over medium-high heat.
- Add the marinated tofu and cook for about 5-7 minutes, turning occasionally, until the tofu is golden and slightly crispy.
- Remove the tofu from the skillet and set aside.
- Prepare the Ratatouille: In the same skillet, add 2 tablespoons of olive oil and heat over medium heat.
- Add the diced onion and garlic, and sauté for about 5 minutes until the onion is translucent.
- Add the diced eggplant, zucchinis, bell pepper. Cook for about 10 minutes, stirring occasionally, until the vegetables begin to soften.
- Add the cherry tomatoes, dried basil, dried oregano, salt, and pepper. Stir to combine.
- Reduce the heat to low, cover, and let it simmer for about 20-25 minutes, stirring occasionally, until all the vegetables are tender and the flavors are well combined.
- Add the cooked tofu to the ratatouille and gently stir to combine.
- Garnish with fresh basil leaves.
