Ingredientes

2 tablespoons soy sauce or tamari (for gluten-free)
1 tablespoon of lemon juice
Minced garlic clove
Dried oregano (to taste)
Dried thyme
Salt and pepper (to taste)
Dried basil (to taste)
Fresh basil leaves, for garnish (optional)

Preparación

  1. Marinate the Tofu: Firm tofu, pressed and cubed.
  2. In a medium bowl, whisk together the soy sauce, olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper.
  3. Add the cubed tofu and toss to coat evenly.
  4. Let the tofu marinate for at least 30 minutes, preferably longer, to absorb the flavors.
  5. In a large skillet, heat a bit of olive oil over medium-high heat.
  6. Add the marinated tofu and cook for about 5-7 minutes, turning occasionally, until the tofu is golden and slightly crispy.
  7. Remove the tofu from the skillet and set aside.
  8. Prepare the Ratatouille: In the same skillet, add 2 tablespoons of olive oil and heat over medium heat.
  9. Add the diced onion and garlic, and sauté for about 5 minutes until the onion is translucent.
  10. Add the diced eggplant, zucchinis, bell pepper. Cook for about 10 minutes, stirring occasionally, until the vegetables begin to soften.
  11. Add the cherry tomatoes, dried basil, dried oregano, salt, and pepper. Stir to combine.
  12. Reduce the heat to low, cover, and let it simmer for about 20-25 minutes, stirring occasionally, until all the vegetables are tender and the flavors are well combined.
  13. Add the cooked tofu to the ratatouille and gently stir to combine.
  14. Garnish with fresh basil leaves.
  15. Enjoy it!
