Preparación
- Cook the pork chop in a skillet with olive oil for 15 minutes or until thoroughly cooked on both sides. Chop finely.
- Boil tomato and onion for 15 minutes. Reserve 1/4 a cup of cooking water and draining the rest. Blend the water, tomato and onion. Add to the skillet on top of the pork chop and mix.
- Rinse the rice, then add to a cooking pot with double the amount of water. Cover and boil at medium heat until the water has been absorbed and the rice is soft.
- Wash, peel and dice the zucchini, then steam for 10-15 minutes until soft. Add to the skillet.
- Serve the pork and veg accompanied by the rice.
