Preparación
- Wash and thoroughly rinse the quinoa grain, then place it in a cooking pot and heat for 2 minutes (at medium heat), stirring the grains constantly
- For each unit of quinoa, add 1 unit of hot water followed by 1 unit of cold water. In total you should have 2 units of water for 1 unit of quinoa. The water will fully cover the quinoa. Cook at high heat for 20 minutes, until the quinoa grain is soft. If it isn´t, add more water and continue cooking while checking constantly.
- Add chicken breast to a cooking pot with boiling water so that it is fully covered. Boil for 20 minutes, until the chicken is thoroughly cooked. Chop or shred, according to the texture your baby is eating.
- Wash, peel and chop the zucchini. Steam for 5 minutes, until it softens.
- In a pan with olive oil, add the quinoa, chicken, zucchini and washed spinach leaves (previously chopped). Mix and cook for 3-5 minutes.
- Chop the avocado into small pieces.
- Serve the chicken an quinoa in a bowl and the avocado as a side or topping.
