Preparación
- Soak the lentils for 12 hours then drain the water. Add 1 unit of water for each unit of lentils. Cook over medium heat and covered for 20 minutes or until lentils are soft. Drain the water completely, then taste and season to taste with a pinch of salt and dried herbs of your choice (oregano, basil, rosemary).
- To cook the rice: in a pot add a cup of rice and two cups of water, cover and simmer for 20-30 min.
- Finely chop the onion and tomato.
- Mix vegetables with lentils and rice. Season with lemon, salt and pepper.
- Finally add chopped avocado.
- Serve and enjoy!
