Preparación
- Soak the lentils for 12 hours then drain the water. Add 1 unit of water for each unit of lentils. Cook over medium heat and covered for 20 minutes or until lentils are soft. Drain the water completely, then taste and season to taste with a pinch of salt and dried herbs of your choice (oregano, basil, rosemary).
- Cook the potato in a pot with boiling water for 20 minutes. Then cut it into pieces.
- Chop the onion and pepper into thin strips.
- Heat oil in a frying pan and add the onion and pepper. Cook for 5 minutes, then add the potato. Cook until the potato begins to brown, then add spinach and turn off the heat.
- Serve a bed of lentils and stew with vegetables and potatoes on top. Season with a pinch of salt.
- Enjoy the apple as a dessert.
