Preparación
- Fill a pot with water and once the water is boiling, cook the whole grain pasta (or you can use egg noodles) according to the package instructions, drain and set aside.
- In a large pot, add the oil and heat over medium-high heat. Add the carrots, celery, and onion, and sauté for about 3 minutes, stirring intermittently. Add the garlic and sauté for an additional 1 to 2 minutes.
- Add the chicken breasts and enough water along with the bay leaves, thyme, oregano, pepper, and salt. Bring to a boil. Reduce the heat and let it simmer covered for 20 minutes. After that time, turn off the heat, remove the chicken, shred it, and return it to the pot along with the pasta.
- Adjust the seasoning and serve with chopped fresh parsley and lemon juice.
