Preparación
- Soak the dates in warm water to soften, about 5 minutes. Combine the oats, and almonds in the bowl of a food processor or blender. Process on low to get a flour-like consistency.
- Pour off the water from the dates. Remove the pits and any stems from the dates and cut each one into about three pieces. Add the dates to the oat mixture in the food processor, followed by the almond butter, softened coconut oil, honey, and cinnamon.
- Process on high speed, adding more coconut oil, and continuing to process if necessary, until the mixture holds together when pressed between your fingers.
- Transfer the mixture to a bowl and shape into 1-inch balls. Squeeze each ball to compress it so they don't fall apart. Place the balls on a plate or a parchment-lined baking sheet and freeze for at least 1 hour.
- Transfer the frozen energy balls to a zip-top bag and store in the freezer until ready to eat.
