Preparación
- In a large mixing bowl, combine the shredded chicken, diced tomatoes, diced red onion, lime juice, chili powder, and pepper. Toss everything together until the chicken is well coated with the seasoning.
- Warm up the tortillas in a microwave or on a dry skillet for a few seconds to make them more pliable.
- Lay one tortilla on a clean, flat surface. Start assembling the burrito by layering the ingredients. First, place a line of cooked rice in the center of the tortilla.
- Add a line of shredded chicken mixture on top of the rice.
- Add a line of sliced avocados, black beans, and corn kernels on top of the chicken.
- Sprinkle shredded cheese over the top of all the ingredients.
- Fold in the sides of the tortilla, then start rolling it up tightly from the bottom to form a burrito.
- Repeat the process with the remaining tortillas and ingredients.
- Optionally, you can grill the burritos on a panini press, skillet, or on a grill for a few minutes on each side to get a nice golden crust.
