Preparación
- Prepare oat flour by placing rolled oats in a food processor or blender and grinding until it reaches a flour-like consistency.
- Once the oat flour is ready, add the remaining ingredients: egg, egg whites, and spinach to the blender. Add 2 tablespoons of almond milk or water for better consistency, along with 1 teaspoon of baking powder and stevia to taste (recommended: 1 packet). Blend until smooth and lump-free.
- Heat a non-stick skillet until very hot. Pour the mixture using a serving spoon, swirling the skillet to spread the batter thinly. When you see bubbles forming on the surface, flip it with a spatula. Repeat until all the batter is used.
- Once the green pancakes are ready, you can add toppings: 1 tablespoon of unsweetened Greek yogurt and 2 chopped strawberries.
